A deep ruby red seaweed, growing from a tiny holdfast attached to rocks and other seaweeds.
It is a small seaweed that only grows in abundance when the conditions are just right. Picked on strong spring tides during autumn.
- Typical uses
Intense flavour and vibrant red colour help it pack a punch. Makes an exquisite seasoning for lamb or fish. Great for buttery sauces, adding a smoky, umami flavour.

We have developed a detailed knowledge of harvest seasons. Specifically, it may be possible to pick small quantities of a variety early in a season, but we delay first harvest until the rates reach commercial scale.
